Recipe: Quick Cinnamon Loaf

Last weekend, I mentioned a couple of recipes that we enjoyed last week, and I have been asked for the recipes...here is one of them (I'll post the other one yet, too).

Cinnamon Sugar Swirl Quick Bread
This recipe is a quick loaf bread that was a real treat for my kids.  There's a cup of sugar in it, so it's not something to be enjoyed every day, but it was quite tasty and extremely fast to get into the oven (about 7-8 minutes from start to oven).

Ingredients
2 cups flour
1 Tbsp baking powder
1/2 tsp salt
1 cup white sugar
1 egg, beaten
1 cup milk
1/3 cup vegetable oil

1/3 cup sugar
2 tsp cinnamon

Directions
Preheat oven to 350.  Lightly grease a 9x5" loaf pan.

Combine flour, baking power, salt and 1 cup sugar.  Add egg, milk and oil.
Stir until just moistened.

Pour half of the batter into the loaf pan.
Sprinkle with lots of cinnamon and 1/3 cup sugar (I used less sugar here).

Cover with remaining batter. (You can use a fork to spread it if the batter is sticky.)

Bake 45-50 minutes.

Cool ten minutes in the pan before removing.  Then wrap in foil and let it sit overnight before slicing.

Note:  I doubled the recipe and made two loaves; one I wrapped in foil and the other I sliced while still warm.  I really couldn't tell the next morning what the benefit was of wrapping the loaf; they both tasted the same to me...delicious!
