For those who asked, here are a couple of recipes that I referred to in yesterday's post:
1. Roasted Chickpeas
This is such an easy recipe, and such a delicious (and healthy) little snack. They're crunchy, too! I drain and rinse a can of chickpeas and pat them dry. Then I toss them with a little bit of olive oil (just enough to make them a bit wet), and sprinkle them with a little garlic salt and cayenne pepper (just a little, in our case, because my kids don't like things that are too spicy). Bake them at 425 degrees for 30-40 minutes. I find that I have to be careful in the last five minutes or so, because once they start to brown, they brown quite quickly and it would be easy to burn them right at the end. My kids love these (especially Lizzie), as do a few other kids that I've offered them to.
2. Soft Pretzels
The Soft Pretzel recipe came from one of my favourite h/school blogs; here's the link: Confessions of a Homeschooler - Soft Pretzels I made the cinnamon-sugar version. The only thing I'd suggest is maybe putting them into the oven at a slightly lower temperature than the recipe suggest, so that you can keep the pretzels in the oven just a little longer...otherwise, though still delicious, they're a little doughy on the inside. The kids loved them. Here are a few pictures of the ones we made last week (at the slightly lower temperature):
Hey, this is great! We make the roasted chickpeas with berbere and salt. Super spicy but so yummmmmmmy. :)
ReplyDeleteAnd now you've totally put me in the mood to make soft pretzels. Maybe tomorrow... yum!
We love baked chickpeas around here too (a toddler favorite!) but we make them sweet, with a bit of cinnamon, sugar and just a pinch of salt. :) yum!
ReplyDeleteand I'm definitely going to try those pretzels...thanks for posting!
Thanks so much Ruth! Can`t wait to give them a whirl this weekend!

ReplyDeleteKatie, great idea re: trying them sweet - I'd never thought of that.
ReplyDeleteANd you're welcome, Katie and Tracey, for the recipes!

The pretzels look even more delicious in the photos than I had imagined in my head (and I had imagined something pretty delicious!!). This is definitely on our list for tomorrow! Thank you!! A
