Matthew's First Solo Baking Experience

Matthew took a four-week cooking class last month, taught by another h/school mom.  Matthew was quite inspired by the discussions of 'real food cooking' and we have enjoyed many conversations since about processed vs unprocessed food, organic vs non-organic, and various common food ingredients.  He can't wait to start the next round of cooking classes.

Two weeks ago, Matthew completed his first solo baking endeavour by making the peanut butter cookies that he learned to make in his cooking class...the only thing he didn't do was take the baked cookies out of the hot oven.  We bought bulk organic peanut butter, organic palm coconut sugar, aluminum-free baking soda, and we pulled out our usual organic eggs.  The cookies were, in my opinion, delicious!  Even more enjoyable:  Watching Matthew experience a sense of accomplishment from doing it all by himself and serving up a plate of cookies to family and friends!  Sadly, I forgot to take a picture of the completed cookies, and they disappeared before I remembered, but they were a definite hit!

  1. Oh oh oh, could you take some of Matthew's cookies to a soup kitchen and drop them off for dessert one day?
    You could look it up on a map (Geography) and make it a field trip! lol You can take the teacher out of the classroom but you can't take the classroom out of the teacher. lol

    We did cookies this week too! lol These no-bakes were always a fav of mine as a child, and found a recipe without the pb, that worked great.

    We added extra oats and real shredded coconut for added flavour and thickening, but loved how we didn't have to put them in the oven, and could surprise dad at dinner with desert. The only part I did was pour the heated liquid into the dry mix, and we shared the stirring. I guess I'd better take a pic too before they are all gone.

    Thought you might like this one as the younger children can each get a spoon and create cookies on wax paper and they harden quick in the fridge.
